Ingredients:
Serves 2.
For the Marinade-
2 teaspoons fresh ginger, grated
3 cloves garlic, crushed
1 teaspoon garam masala
1/2 teaspoon ground cumin
1/4 teaspoon ground turmeric
1/4 teaspoon chilli powder
2 tablespoons lemon juice
3 tablespoons oil
salt & pepper to taste.
For the Salsa-
1 ripe Mango, peeled, pitted, and diced
1/2 medium red onion, finely chopped
1 medium red chilli, de-seeded & finely minced (optional)
1 small cucumber, peeled and diced
3 Tbsp fresh coriander leaves, chopped
1 Tbsp fresh mint leaves, chopped
3 Tbsp fresh lime juice
Salt and pepper to taste
Method:
1. Combine all marinade ingredients together and mix well.
2. Add the fish to the marinade cover and refrigerate for thirty minutes.
3. Place the fish on the bbq or in the oven under a hot grill until it flakes easily (approx. 3-4 minutes either side depending on the thickness of the fish). It should form a flavourful crust.
4. Serve the Salmon immediately with Mango Salsa & rice.
Preparing the Salsa:
1. Combine all of the ingredients in a bowl. Season to your taste and its ready to serve.
