Hoisin Pork Ribs

Ingredients:

Serves 4.


3 pounds of Pork spare ribs or Beef ribs
3 tablespoons hoisin sauce
3 tablespoons green onion, chopped
2 cloves garlic, minced
3 tablespoons sesame oil
2 tablespoons rice vinegar
2 tablespoons orange juice
2 tablespoons grated ginger
½ tsp of crushed dried chillies (optional)
1 tablespoon brown sugar

1. Wash ribs, pat dry & keep aside while preparing the marinade.

2. Combine all the other ingredients in a large bowl and mix well. Add ribs to the marinade, cover & refrigerate for a minimum 4 hours.

3. Barbecue the meat for about ten minutes. Do not baste them during the first ten minutes. After this time, move the ribs to an area of indirect heat and grill for ten more minutes, basting often with the sauce. It should form a crispy crust on the ribs.

4. Alternatively, cook ribs in the oven under a hot grill. When ready, serve immediately with rice & your choice of stir fried vegetables.

I've been meaning to try your Moroccan Tagine spices so I went in search of them this week but couldn't find any. I tried for them in Tesco and Dunnes in Athlone and Nolans in Clontarf (who have a wide range of organic produce). Any ideas where they are stocked on the Northside of Dublin or Dublin city centre? I love your Middle Eastern style recipes - please post more of them!

delighted you like my recipes and I am sorry you've had a tough time sourcing the Orgapod Moroccan Tagine spice mix. Tesco only stock our Chai (spiced teas)range at present but the spice mixes are available from select Dunnes stores nationwide. I believe the closest stores to you that stock our products would be Dunnes Charlestown in Finglas or Dunnes, Swords. My colleague has a meeting next week with a small shop in Artane that may possibly take on board the spices. If so, I will advise you of the same.
