Ingredients:
Serves 5.
2 lbs pork spare ribs
4 tbsp oil
½ cup clear honey
½ cup dark soysauce
6 tbsp tomato ketchup
1/2 tsp chilli powder
4 cloves garlic chopped finely
1 tsp English mustard powder
2 tsp paprika
salt & pepper to taste
¼ cup dry sherry
½ cup orange juice
½ cup red wine vinegar
Method:
- Rinse spare ribs under cold running water & pat dry.
- Combine rest of the ingredients except oil in a large mixing bowl.
- Marinate pork ribs for 4 hrs or preferably over night.
- Fry ribs in the oil over medium heat. When the ribs are slightly browned, pour marinade over. Cover, lower heat and simmer for about 40 mins – turning the ribs occasionally.
- Serve ribs with rice.
